Pumpkin and Fig Pudding

Fall is in full swing, which means… pumpkin-themed food everywhere! It’s probably a good idea to forego the sugar-laden fall-themed drinks at Starbuck’s, but don’t skip all the pumpkin treats. Here’s a delicious  Pumpkin Fig Pudding recipe, courtesy of Karman Meyer at NashvilleFit Magazine. Have it for dessert any night, or save it for Thanksgiving dinner. Or both!

3/4 cup canned pumpkin (not pumpkin pie filling)
1/4 cup Vanilla Greek Yogurt
1 Scoop Swee2ooth Vanilla Thrilla Diabetic Fit Shake
6-1 inch frozen banana slices
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger

Toppings:

fresh Mint and figs sliced
raw pumpkin seeds
chia seeds

Directions:

Combine all ingredients, except the topping ingredients, in a blender until smooth. Pudding will be thick. Pour the pudding into a bowl and top with mint leaf sliced fresh figs, pumpkin seeds, and chia seeds
